Recipe - Zuchini Relish

10 cup Fresh ground zuchini
4 cup Ground onions
5 tablespoon Kosher salt
2 One half cup White vinegar
4 One half cup Sugar
1 tablespoon Nutmeg, tumeric, cornstarch
and dry mustard
One half White pepper
2 teaspoon Celery salt
1 lg Green pepper, chopped fine
1 lg Red pepper, chopped fine
Mix zucchini, onions and Kosher salt together a let stand overnight; drain
and rinse in cold water. Add remaining ingredients.
Boil and simmer for 30 minutes. Then can your favorite way.
This stuff is wonderful on everything you would use pickle relish but
better.
