Recipe - Zucchini Tabbouleh

5 small Zucchini; cut in small minced
very small
2 cup Minced parsley leaves
4 Scallion; minced
One fourth cup Fresh mint; minced
One half cup Lettuce leaves; minced
One fourth teaspoon Salt
One fourth cup Lemon juice
Three fourths cup Olive oil
1 Cl Garlic; minced

ingredients, mixing well. Refrigerate before serving.
Makes 8 servings.
