Recipe - Zucchini Seafood Casserole

4 cup Zucchini; peeled and cut or sliced up
One fourth inch
1 One half cup Bisquick baking mix
1 One half cup Shredded processed sharp
American cheese
1 cup Chopped onion
1 cn (6 One half oz.) crab meat;
drained and cartilage
removed or 1 can (6 1/2
oz.) tuna, drained
One half cup Vegetable oil
3 Eggs; beaten
1 teaspoon Dried oregano
1 teaspoon Salt
One half teaspoon Pepper
Heat oven to 400 degrees. Grease baking dish (12 x 7 One half x 2). Mix all
ingredients together. Spread evenly into casserole. Bake uncovered until
golden brown and inserted knife in center comes out clean, 2530 minutes.
Garnish with thinly cut or sliced up zucchini.
