Recipe - Zucchini Quesadillas

3 Flour or corn tortillas
One half cup Green onions, thinly cut or sliced up
1 md Jalapeno chile, seeded &
minced
2 cup Zucchini, julienned
1 cup Corn niblets
One fourth cup Black olives, cut or sliced up
Preheat oven to 400F. Place one tortilla on an ungreased oven baking sheet
& layer with half the remaining ingredients. Top with a second tortilla &
the rest of the filling. Finish with the final tortilla. Bake about 10
minutes, till the tortilla are browned around the edges. Cut into quarters
& serve hot.
