Recipe - Zucchini Meat Loaf

1 One half cup Zucchini grated
1 pound Turkey ground
1 md Onion chopped
One half cup Combined red and green
Pepper chopped
2 cup Bread crumbs
1 Egg white
1 cn Tomato paste (6 oz)
1 tablespoon Parsley
1 teaspoon Tarragon
1 tablespoon Basil
One half teaspoon Black pepper
1 cup Cheddar cheese grated

Preheat oven at 350. Prepare loaf pan with cooking spray. In a mixing
bowl, combine zucchini, turkey, onion, peppers, bread crumbs, egg white,
tomato paste, parsley, tarragon, basil, and black pepper. Press mixture
into prepared pan and cover with foil. Bake for 1 One fourth hours. Sprinkle
cheese over the top. Return to oven and bake another 10 minutes.
