Recipe - Zucchini Latkes

2 md Zucchini, shredded
2 tablespoon Wheat germ or matzo meal
5 tablespoon Whole wheat flour, sifted
(up to 6)
3 lg Eggs, well beaten
One half teaspoon Salt, or to taste
Generous pinch of pepper
2 Cloves garlic, minced, or
One fourth teaspoon Garlic powder
Oil, for frying

Combine all ingredients, mixing well. Drop by tablespoonful into hot oil
in a skillet and fry on both sides until golden brown. Yields 1012
latkes.
