Recipe - Wine Poached Fruit

2 cup Rose wine
2 tablespoon Raspberry liqueur
2/3 cup Sugar
1 Vanilla bean
3 Ripe firm peaches
3 Plums
TOPPING
One half cup Heavy cream
One half teaspoon Sugar
One half teaspoon Brown sugar
One half teaspoon Vanilla extract
Mix together wine, liqueur, sugar & vanilla bean in large pot. Bring to a
boil. Reduce heat to simmer. Add peaches & plums. Poach until tender, about
5 minutes. Remove pan from heat Pan from heat & let cool a bit. Drain
fruit. Whip heavy cream with sugars & vanilla until soft peaks form. To
serve: place fruit in serving bowls topped with whipping cream.
Approximately 68 minutes.
