Recipe - Wild Mushroom Chowder

1 pound Wild mushrooms; washed and
minced
2 md Onions; minced
One half Stick butter; (2 ounces)
One fourth cup All purpose flour
8 Potatoes; peeled and minced
2 tablespoon Dried thyme
Freshly ground black pepper
to taste
4 cup Half and half
One fourth cup Fresh Italian parsley;
chopped, for
; garnish
Saute the mushrooms and onions in the butter until the onions are
translucent. Stir in the flour. Put this mixture into a medium saucepan
along with the potatoes, thyme, pepper, and halfandhalf.
Cover and simmer for about 20 to 30 minutes. Stir frequently, taking care
not to let the chowder burn. Serve it topped, with the Italian parsley.
