Recipe - White Beans With Sun-Dried Tomatoes

1 One half cup Sundried tomatoes; not
oilpacked
1 tablespoon Olive oil
1 lg Yellow onion; minced
3 Cloves garlic; minced
3 15 ounce cans cannellini beans;
rinsed & drained
One fourth cup Water
One half teaspoon Ground sage
One half teaspoon Salt
One half teaspoon Black pepper
One fourth teaspoon Dried red pepper flakes
1/3 cup Fresh basil; chopped
In small bowl, soak tomatoes in enough warm water to cover until soft,
about 1 hour. Drain; coarsely chop.
In saucepan, heat oil over mediumhigh heat. Add onion and garlic; cook,
stirring, until onion is soft and translucent, about 4 minutes. Add beans,
tomatoes, water, sage, salt, black pepper and red pepper flakes; cook for
1015 minutes. Stir in basil; remove from heat. Keep warm until ready to
serve. Makes 6
