1 Onion minced and softened in
a little oil
1 cn Tomatoes
1 cup Chicken stock or vegetable
soup
Salt and pepper
One half teaspoon Sugar
Dried chilli
Put ingredients in a blender. Heat with a little dried chilli. Take the
chilli out when desired heat is achieved. Serve with a little shredded
basil on top Too easy!
Other suggestions: Wendy says this 'soup' is also a base for heaps of
serving suggestions. Here are just a few ways you might like to modify this
soup to your family's tastes. Why not add: pancetta, fetta crostini,
anchovies, fresh herbs, cut or sliced up ginger, tuna, cubed chicken or tofu, or
vegetable stacks made of potato, capsicum or eggplant.
