One half kg Chicken mince
5 Heaped tablespoons of fresh
breadcrumbs
Freshly grated nutmeg
Salt and pepper
Flour
Olive oil for frying
Mix chicken mince with breadcrumbs and One fourth knob of grated nutmeg. Add salt
and pepper, roll into sausage shape and roll in flour. Brush on a small
amount olive oil into a pan and gently cook on all sides until done. Put on
absorbent paper to drain.
Other flavours of nutmeg could be fresh marjoram and a fine grating of
lemon rind, pistachio nuts and orange rind, shallots, chilli and shredded
kaffir lime leaves.
