Recipe - Warm Turkey Salad

1 225 gram pac turkey stirfry
100 g Smoked streaky bacon; cut
into strips
1 pack Kumquats or 100g/4oz loose
bought
; halved
25 g Unsalted butter
Olive oil
2 Cloves garlic; crushed
1 tablespoon White wine vinegar
2 tablespoon Freshly squeezed orange
juice
1 tablespoon Chopped chives
1 pack Rocket
1 pack Mixed herb salad
2 Thick cut slices brown
bread; cut into 1cm/1/2"
; croutons
FOR THE DRESSING
2 tablespoon Sherry vinegar
1 teaspoon Grain mustard
4 tablespoon Good olive oil
1 tablespoon Walnut oil
Seasoning
1 Heat the butter and oil in a frying pan. Add the garlic and cook for a
few minutes. Add the bacon, cook for five minutes. Follow with the turkey
strips.
2 Add the halved kumquats and then the wine vinegar, orange juice and
chives. Heat through. In a separate pan cook the croutons in olive oil
until golden brown.
3 Place all the dressing ingredients in a screwtopped jar or in a mixing
bowl and whisk or shake together. Taste and adjust the seasoning as
necessary.
4. Spoon the turkey and bacon mix over the top and scatter with croutons.
Drizzle the dressing over just before serving.
