One fourth cup Fruity olive oil
1 tablespoon Whole yellow mustard seeds
One half cup Minced onion
2 teaspoon Minced garlic
One fourth cup White balsamic vinegar
One half cup Peeled; minced tart sweet
apple such as
Gala
Salt; to taste
Freshlyground black pepper;
to taste
1 pound Young tender mustard greens;
tough stems removed
One fourth pound Pancetta; thinly cut or sliced up ,
; and lightly browned
3 ounce Stilton cheese; crumbled
Add oil and mustard seeds to a nonstick skillet over moderate heat and cook
until mustard seeds begin to pop (cover if necessary). Add the onion and
garlic and cook until soft but not brown. Stir in the vinegar and apple and
season to taste with salt and pepper. Pour over mustard greens and toss
with pancetta and Stilton. Serve immediately. This recipe yields 4
