Recipe - Warm Exotic Mushroom Salad

2 Oranges
3 tablespoon Sunflower oil
5 Shiitake mushrooms; stalks
trimmed, up
; to 6
8 ounce Chestnut mushrooms; thickly
cut or sliced up
5 Oyster mushrooms; up to 6
2 tablespoon Sesame seeds
3 ounce Baby spinach leaves
Peel and segment one orange. Heat oil in a large frying pan. Add shiitake
and chestnut mushrooms and cook for 3 minutes. Add oyster mushrooms, cover
and cook for a further 2 minutes.
Add sesame seeds and grated rind and juice or remaining orange. Stir in the
orange segments and spinach.
Heat through and serve immediately.
