Recipe - Warm Breaded Chicken Salad

SALAD
1 Head curly endive; (about 8
cups/2L) 1
1 Bulb fennel; thinly cut or sliced up
(raw,
; grilled or roasted)

2 cup Cherry tomatoes 500 mL
1 cup Black olives 250 mL
2 tablespoon Red wine vinegar 25 mL
One fourth cup Extra virgin olive oil 50 mL
Salt and pepper to taste
One fourth cup Chopped fresh basil 50 mL

Break lettuce into 2"/5cm pieces and combine with fennel, cherry tomatoes
and olives. Prepare dressing by combining red wine vinegar with olive oil,
salt and pepper.

When ready to serve, combine dressing with salad in a large flat serving
dish. Place chicken on top. Sprinkle with basil. Serve chicken hot or at
room temperature.
