Recipe - Veggie Crab Cakes

2 cup Zucchini, grated (no need to
peel)
1 cup Seasoned bread crumbs
1 tablespoon Old Bay seasoning
Egg substitute or egg whites
to equal 1 egg
1 tablespoon Fatfree mayo
1 small Grated onion
Put grated zucchini on a towel and squeeze out all of the water. Mix all
ingredients together and form into patties with your hands. Cook in a
nonstick skillet ontil golden brown on both sides and done in the middle.
We had these with salsa, but you could make any kind of sauce, such as
yogurtcucumber, and they would be just as good.
