Recipe - Vegetarian Pancakes

3 md Leeks; cut into thin slices
1 lg Onion; minced
1 lg Can tomatoes; chopped, (or
use fresh tomatoes if you
have the time to peel
them!)
Salt
Pepper
Nutmeg
Oregano
Source: family recipe
Fry the onion in oil, then add the cut or sliced up leek and fry for another few
minutes. Add tomatoes and simmer for 510 minutes. Season to taste. If
you're not a vegetarian you could also add some beef stock, just for the
taste... (If this gets too fluid, sprinkle with some flour to thicken the
sauce.)
