Recipe - Vegetable Rice Bake

One half cup Yellow onions minced
One half cup Celery finely chopped
1 Garlic clove minced
2 tablespoon Margarine
2 Three fourths cup Chicken broth
1 cup Longgrain brown rice
One fourth teaspoon Salt
One fourth teaspoon Black pepper
Freshground
One half cup Carrots peeled, minced
One fourth cup Green peppers minced
* Make sure all the vegetables are finely minced .
Saute onion, celery, and garlic in the margarine. Use a heavy pan with a
tight fitting lid. Add the broth, brown rice, salt and pepper. Cover
tightly and cook over low heat for 3540 minutes. Stir in carrots and green
peppers; cook 1015 minutes longer.
