Recipe - Vegetable Ribbon Meatballs

One fourth cup Onion chopped
3 tablespoon Butter
1 One half cup Mushroom cut or sliced up
2 cup Broccoli chopped
1 cup Tomato minced
1 cup Rice uncooked
2 cup Water
2 Chicken bouillon cubes
One half teaspoon Salt
One half teaspoon Oregano
One fourth cup Cheese grated

Cook onions in butter until golden; Add mushrooms, broccoli and tomatoes
and cook about 4 minutes. Add water and bouillon cubes and bring to a boil.
Stir in rice, salt and oregano. Cover and cook over low heat, 20 minutes or
until water is absorbed. Stir in parmesan cheese, serve hot or cold.
