Recipe - Vegetable Pecan Burgers

One half cup Chopped onions
1 tablespoon Mixed garlic
1 tablespoon Olive oil
1 pack (8oz.) mushrooms; cut or sliced up
One half cup Toasted pecans
3 cup Kellogg's rice krispies
cereal
1 cup Cooked brown rice
One fourth cup Finely chopped green pepper
1 cup Shredded carrots
One half teaspoon Salt
One fourth teaspoon Black pepper
1/8 teaspoon Cayenne pepper
2 Egg whites
Vegetable cooking spray
1.In 12inch nonstick frypan, over medium heat, saut‚ onions and garlic in
oil 2 minutes. Add mushrooms and saut‚ 4 minutes longer or until mushrooms
are just tender. Remove from heat.
2.Coarsely chop pecans in food processor, using metal blade. Add Kellogg's
® Rice Krispies® cereal, rice, green pepper, seasonings and mushroom
mixture. Pulse process about 15 seconds or until mixture is a mealy
consistency. Remove to mixing bowl and stir in egg whites. Divide mixture
into 6 portions, about One half cup each and shape into patties. Place on baking
sheet coated with cooking spray.
