Recipe - Vegetable-Bulgur Pilaf

1 One half cup Couscous, uncooked
2 cup Boiling Water
One fourth teaspoon Salt
1 cn (8 Oz) Garbanzo Beans,
rinsed and drained
1 md Tomato, chopped and seeded
One half cup Pesto Sauce
3 tablespoon Lemon Juice
1/8 teaspoon Pepper
2 Green Onion, thinly cut or sliced up
1 cn (15 Oz) Kidney Beans, rinsed
and drained
4 cup Broccoli Spears, cooked
Place couscous in medium bowl. Add boiling water and salt; stir well. Cover
and let stand 57 minutes or until water is absorbed. Stir in remaining
ingredients except broccoli. Serve over broccoli.
