Recipe - Vanilla Sables

2 Sticks unsalted butter;
softened
One half cup Sugar
1 pn Salt
1 Egg yolk
1 teaspoon Vanilla extract
2 cup Allpurpose flour
With an electric mixer beat together butter, sugar and salt until very
light, about 5 minutes on medium speed. Beat in yolk and vanilla. Remove
from mixer, sift in flour and stir to blend. Divide dough in half and shape
into two 8inch long cylinders, forming them in sheets of parchment paper.
Chill until firm.
Preheat oven to 325 degrees F. Slice cylinders of dough 1/4inch thick and
arrange on parchment paperlined baking sheets. Bake 15 to 20 minutes.

Variation: Add 1 One half cups chopped slivered nuts to dough before shaping
logs.
