Recipe - Tomato Rice

4 tablespoon Margarine nondairy
1 lg Onion chopped
1 cup Rice long grain
32 ounce Tomatoes, canned chopped
2 tablespoon Tomato paste
1 One half cup Tomato juice
Vegetable stock or water
Boiling
Melt the margarine in a large saucepan and saute the onion until tender.
Add the rice and stir well. Add the tomatoes, tomato paste and tomato
juice, and bring the mixture to a boil. Cover, reduce the heat and simmer
for 2535 minutes or until the rice is tender. Check on the liquid content
towards the end of cooking, and add boiling stock if necessary. Serve hot.
