Recipe - Tiger Nut Milk (Horchata De Chufas)

Tiger Nuts (available from
health food shops)
500 ml Hot Water
One half Lemon
Sugar to taste
Soak the nuts overnight. Rinse them well and put them through a blender
with the hot water until the mixture is hot and milky. Press the moisture
from the nuts in a double muslim or through a very fine sieve. Sweeten and
add the zest of half a lemon. Cover and chill thoroughly before serving.
