Recipe - Three-Bean And Tuna Salad

15 ounce Cannellini beans; rinsed and
drained
15 ounce Great northern beans; rinsed
and drained
15 ounce Kidney beans; rinsed and
drained
1 lg Bell pepper; chopped
1 md Onion; chopped
One fourth cup Fresh parsley; chopped
One fourth cup Olive or vegetable oil
2 tablespoon Lemon juice
2 tablespoon Capers
One fourth teaspoon Red pepper sauce
Lettuce leaves
6 1/8 ounce Tuna in water; drained
Lemon wedges; if desired
Mix beans, bell pepper, onion and parsley. Shake oil, lemon juice, capers
and pepper sauce in tightly covered container. Toss oil mixture and bean
mixture. Spoon onto lettuce. Top with tuna. Serve with lemon wedges.
