Recipe - Thai Coleslaw

1 Head green cabbage, shredded
One half Head red cabbage, shredded
4 Green onion, cut or sliced up
1 Jalapeno pepper, seeded and
minced
One fourth cup Cilantro, chopped
1 Cucumber, seeded and chopped
1 Red pepper, chopped
One half cup Peanuts, chopped
DRESSING
One half cup Oil
One fourth cup Rice wine vinegar
One half teaspoon Curry powder
2 tablespoon Sugar
2 Garlic cloves, crushed
Mix all of the ingredients for salad together in a large bowl. Whisk
dressing ingredients together and toss with salad when ready to serve.
