BURGERS
1 pound Lean ground beef
1 tablespoon Lemon grass, finely chopped
One fourth cup Fresh chopped cilantro
2 teaspoon Thai fish sauce or soy
sauce
1 teaspoon Brown sugar
One half teaspoon Grated lime peel
One half teaspoon Hot Oriental chili paste
One half teaspoon Salt
One half cup Fresh breadcrumbs
RELISH
One half English cucumber (or
regular), chopped
One fourth cup Chopped fresh mint
1 tablespoon Thai fish sauce or soy
sauce
1 tablespoon Rice vinegar
1 tablespoon Sugar (use much less, use
none actually)
Combine burger stuff, shape into 46 burgers. Drain
chopped cucumber; mix in remaining ingredients;
reserve.
Just before serving, heat grill and brush with oil.
Cook burgers and 4 minutes per side, turning once.
Makes 46 servings.
(If lemon grass is very dry, soak 20 minutes before
using. If you cannot find lemon grass, use 1 tsp.
grated lemon peel.)
