Recipe - Texas Meatloaf

MAZOLA No Stick corn oil
Cooking spray
2 tablespoon MAZOLA corn oil
1 Green pepper coarsely
Chopped
1 lg Onion, chopped
3 Cloves garlic, minced
1 One half pound Lean ground beef*
2 Egg whites
Three fourths cup Oldfashioned oats
Three fourths cup Barbecue sauce, divided
1 cn (4 oz) chopped green
Chilies, undrained
1. Spray 8 One half x 4 One half x 2 1/2inch loaf pan with cooking spray.
2. In large skillet heat corn oil over mediumhigh heat. Add green pepper,
onion and garlic; stirring frequently, cook 4 minutes or until tender.
Remove
from heat.
3. In large bowl combine ground beef, egg whites, oats, One half cup barbecue
sauce
and chilies. Stir in cooked vegetables. Spoon into loaf pan.
4. Bake in 350 F oven for 1 hour. Drain excess liquid.
5. Invert loaf onto serving platter. Spoon remaining One fourth cup barbecue
sauce
over top. Let stand 10 minutes before slicing.
Makes 8 servings.
* Use ground round or 90 percent lean ground beef
