Recipe - Teriyaki Salad

15 ounce Garbanzo Beans; Drained And
Rinsed
1 One half cup Sliced Mushrooms
1 Tomato; Cubed
1 Scallion; Chopped
One half Green Bell Pepper; Coarsely
Chopped
One half pound Firm Tofu; Cut Into 1/2"
Cubes
One fourth Cu Fresh Parsley; Chopped
DRESSING
2 tablespoon Rice Vinegar
2 tablespoon Safflower Oil
1 tablespoon Dijon Mustard
1 teaspoon Soy Sauce
1 Clove Garlic; Finely Minced
One fourth teaspoon Dried Ginger
One fourth teaspoon Black Pepper
2 tablespoon Sesame Seeds
In salad bowl, toss together salad ingredients. In a small bowl, combine
dressing ingredients. Pour over salad and toss. Using a slotted spoon,
arrange mixture on lettuce leaves. Garnish with red pepper strips.
