Recipe - Tender Beef Filet

4 Tenderloin filet steaks;
(approx. 1 One half pounds)
4 tablespoon Butter
1 Clove garlic; crushed
2 tablespoon Chopped parsley
Salt and pepper
One fourth cup Brandy
1 tablespoon Worcestershire sauce
Pound steaks with a meat mallet until thin Melt butter in a pan. Add steaks
and sear on each side over high heat Remove steaks and keep warm
To pan juices add garlic, salt, pepper parsley and Worcestershire sauce.
Heat and simmer for 3 minutes. Return steaks to the pan; baste and simmer
for 2 minutes pour brandy over steaks; simmer 3 or 4 minutes. Remove steaks
and serve immediately with Bearnaise Sauce (optional)
