Recipe - Tasty Chicken Vachos

3 lg Potatoes, thinly cut or sliced up (1
to 1 One half lbs)
6 ounce Cooked chicken, shredded or
minced
One fourth cup Picante sauce
3 tablespoon Diced onions
1/3 cup Grated lowfat cheddar cheese
1/3 cup Grated Monterey Jack cheese
One fourth cup Sliced ripe olives
One fourth cup Sliced jalapeno peppers
A lowfat alternative to nachos.
Here are two recipes I picked up in the Health Zone at AOL. The chocolate
shakes are great, but I haven't tried the nacho/vachos yet.
Boil potato slices for 35 minutes or until slightly tender. Drain and
arrange on an ovensafe serving platter, overlapping slices. Combine
chicken, picante sauce and onions in a small bowl; spoon this mixture over
potatoes. Sprinkle with cheese, olives and jalapenos. Broil 46" from heat
until cheese is melted.
