Recipe - Tarragon-Marinated Mushrooms

12 ounce Small white button mushroom
3 tablespoon Fresh lemon juice
3 tablespoon Fresh tarragon leaves;
coarsely chopped
2 tablespoon White wine vinegar
3 tablespoon Extravirgin olive oil
Three fourths teaspoon Salt
1/8 teaspoon Freshground pepper.
Using a damp cloth gently wipe the mushrooms clean. Trim stems flush with
caps and discard stems. Place mushrooms in a medium bowl and add remaining
ingredients. Toss to combine. Set mushrooms aside, at room temperature to
marinate, stirring occasionally, for at least 20 minutes or up to four
hours.
