Recipe - Tahini-Miso Sauce

1 tablespoon Oil
3 tablespoon Whole wheat pastry flour
One fourth cup Tahini
1 One fourth cup ;water or vegetable stock
2 tablespoon Miso
Heat the oil in a small saucepan. Add the flour and cook, stirring
constantly, until the flour is lightly browned and begins to give off a
nutty aroma.
Remove the pan from the heat and stir in the tahini.
Add a small amount of water and stir vigorously to form a paste.
Return th epan to the heat and slowly add the remaining water. Stirring
continuously, cook the sauce until the desired consistency is reached. If
the sauce is too thick, add a little water.
Remove from the saucepan from the heat and add the miso. Stir well.
Variation:
Saute One half cup of finely chopped onion in the oil before adding the flour.
Mix well and proceed as indicated above.
