Recipe - Swordfish With Tomato Basil Relish

Ingredients:

4 810 ounce swordfish steaks
1 cup Fresh tomatoes; minced
1 teaspoon Red wine vinegar
1 tablespoon Vegetable oil
1 tablespoon Fresh chopped basil
One half teaspoon Fresh minced garlic
One half teaspoon Salt
One fourth teaspoon Black pepper

PREPARATION: 1) Cook fish on a well oiled grill 45 minutes each side. 2)
Mix remaining ingredients. 3) Heat in a sauce pan over low or microwave
until all ingredients are warmed through. 4) Do not cook tomato mixture or
else it will become mushy and lose its fresh flavor.

Suggested Wine: Amber Ale or White Grenache

NOTES : A wild rice mixture will be excellent with this dish. For a
different edge try cilantro instead of basil.
