Recipe - Swordfish Delmonico

One half cup Butter
2 tablespoon Flour
One half cup Milk
One fourth cup Grated Parmesan cheese
Salt & pepper
One half cup Dry sherry
2 pound Swordfish, halibut, bass,
Snapper
One half cup Crab meat
One half cup Cooked shrimp
Minced parsley (for
Garnish)
Melt butter in top of double boiler directly on cooking surface; add
flour slowly, stirring constantly. Place top over boiling water; add
milk & continue stirring until sauce thickens. Add cheese, salt,
pepper & sherry, mixing thoroughly. Place fillets, crab & shrimp in
greased baking dish; pour sauce over fish. Cover & bake in 350 oven
for 30 minutes or until bubbly. Garnish with parsley just before
serving.
