Recipe - Swiss-Chicken Bake

4 Chicken breasts, skinned and
deboned if you prefer
1 cup Uncooked rice
1 pack Chicken broth ( you can also
use One half packet onion soup
mix)
1 cup Water
1 cup V8 juice
One half Diced green pepper
1 md Onion minced
Salt and pepper
Three fourths cup Swiss cheese, grated
In buttered casserole dish, place raw rice. On top of rice, place chicken
breasts and sprinkle with salt and pepper. Sprinkle onion and green pepper
on top. Pour chicken broth, hot water, and V8 over top. Sprinkle cheese on
top. Bake at 350F uncovered for an hour, then uncover and bake for another
15 minutes. This is just easy comfort food.
