Recipe - Stuffed Pizza Italian Sausage And Spinach Pie

Ingredients:

1 pound Hot sausage; casings removed
1 pound Fresh spinach; stems
removed, chop
1 cup Shredded Mozzarella cheese
Pizza dough; (recipe to
follow)
1 tablespoon Olive oil
Freshly ground black pepper

Cook sausage in large skillet until browned; drain fat. Add spinach. Cook
until spinach wilts, 3 minutes. Cool slightly.

Roll out dough on lightly floured surface to a 10x12 inch rectangle.
Transfer dough to an oiled baking sheet. Spoon sausage mixture evenly over
half of the dough lengthwise, leaving a Three fourths inch border. Cover with
shredded cheese. Fold dough over filling. Press and seal edges of dough
with krimpkut sealer. (If no krimpkut, use fork.) Brush top of dough with
olive oil. Sprinkle with pepper to taste. Make several slits in top of
dough with knife. Bake in lower third of preheated 400 degree oven until
well browned, 15 to 20 minutes. 46 servings. Dough: One half pkg. dry yeast 3/4
c. warm (105 to 115 degree) water One half tsp. sugar One half tsp. salt One fourth c. olive
oil 1 egg 2 to 2 One half c. flour Õ Dissolve yeast in water in medium bowl.
Let stand in warm place until bubbly. Add sugar, salt, egg, and enough
flour to make a smooth dough. Turn dough out on lightly floured surface.
Knead until smooth and elastic, about 10 minutes.
