Recipe - Stuffed Peppersjambalaya

3 lg Bell peppers; halved
4 tablespoon Oil
10 ounce Smoked sausage
2 md Onions; minced
2 Bell peppers; minced
4 Ribs celery; minced
2 Bay leaves
3 cl Garlic; minced
2 tablespoon File gumbo powder
One half cup Green onions; cut or sliced up
One fourth cup Chopped parsley
1 cn Tomato sauce; 8oz
1 cn Crushed tomatoes; #21/2
8 ounce Fresh crab meat
1 pound Cooked crawfish tails
3 One half cup Cooked rice
4 ds Tabasco
4 ds Worcestershire sauce
x Salt and pepper
x Olive oil
x Bread crumbs
Heat oil. Add sausage, veggies and bay leaf. Cook 5 minutes. Add file,
green onions, parsley and tomatoes. Simmer 20 minutes. Add remaining
ingredients and mix well. Put mix into bell peppers. Top with crumbs.
Drizzle oil on top. Bake at 400~ for 20 to 25 minutes. Can be served with a
tomato sauce on top. (NOTEThis seems like it would make a lot more
stuffing than for 3 peppers)
