Recipe - Stuffed Apricots

1 125 gram ful fat cream
cheese; (4oz)
3 tablespoon Creme fraiche
2 teaspoon Lemon rind
500 g Fresh apricots; stoned and
halved
; or 250g bag of
; dried ready to eat
; apricots (1lb)
15 g Pistachio nuts; chopped (
One half oz)
Mix the cream cheese, creme fraiche and lemon rind together, spoon into a
piping bag fitted with a star or plain nozzle.
Pipe onto the fresh apricot halves, or on the dried apricots. Sprinkle over
the pistachio nuts to decorate.
