Recipe - Strawberry Parfait (Low Fat)

2 cup Nonfat milk
One fourth cup Nonfat powdered milk
1/3 cup Granulated sugar
3 tablespoon Cornstarch
One half teaspoon Vanilla
STRAWBERRY COULIS
2 cup Strawberries
2 tablespoon Confectioners sugar
24 Strawberries; hulled and
cut or sliced up , (about 3 cups)

Bring milk, powdered milk, sugar and cornstarch to boiling in saucepan over
low heat, stirring constantly, until thickened, 15 to 20 minutes; then boil
30 seconds. Remove from heat. Add vanilla. Strain into bowl. Place plastic
wrap directly on surface of custard. Refrigerate until chilled and firm,
about 30 minutes. Prepare coulis: Puree strawberries and sugar in blender
or food processor. In parfait glasses or custard cups, alternate layers of
pudding, coulis and cut or sliced up berries. Chill.
Per serving: 125 calories, 1 gm fat
