Recipe - Strawberry Angel Food Souffle

2 cup Angel food cake; crumbled
16 ounce Frozen strawberries (in
syrup; thawed, pureed,
divided)
1 teaspoon Orange extract
5 Egg whites
One half cup Sugar
Combine cake crumbs, 1 One half cup strawberry puree, and extract in large bowl.
Pour remaining One half cup strawberry puree into bottom of 2 quart souffle dish
that has been greased and sprinkled with sugar.
Beat egg whites to stiff peaks in large bowl, adding sugar gradually; fold
gently into cake mixture. Pour into souffle dish. Bake at 350 until puffed
and set, about 35 minutes.
Per serving = 341 calories, 0 gm fat, 0 mg cholesterol, 448 mg sodium, 79
gm carbohydrate, 1 gm fiber, 8 gm protein
