Recipe - Strawberry-Pecan Bread

2 Eggs
1 cup Granulated sugar
1 One half cup Allpurpose flour
2 teaspoon Ground cinnamon
One half teaspoon Salt
1 teaspoon Baking soda
1 pack (10oz) frozen; cut or sliced up
strawberries or red
raspberries in syrup;
partially thawed
1 One half cup Coarsely chopped pecans or
walnuts
One half cup Oil
Beat eggs, sugar and oil until well combined. Add flour, cinnamon, baking
soda and salt. Beat until well blended (batter should be thick). Stir in
the partially thawed, undrained berries and the nuts.
Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350F for 5565
minutes, or until tester comes out clean.
Let cool in pan for 10 minutes. Remove from pan and cool completely on a
wire rack. Wrap and store in refrigerator.
