Recipe - Strawberry-Apricot Caramel Sundaes

1 cup Apricots; Chopped
1 cup Sliced Strawberries
2 tablespoon Orange Juice
2 cup Vanilla LowFat Ice Cream
One fourth cup FatFree Butterscotch
Flavored Syrup
4 teaspoon Pistachio Nuts; Chopped
Sugar Cookies; Optional
Combine first 3 ingredients in a bowl; stir well. Cover and chill 30
minutes. Spoon ice cream into stemmed glasses; top with fruit mixture and
syrup. Sprinkle with pistachios. Serve with a sugar cookie, if desired.
