800 g Gnocchi
2 pack Trimmed French beans;
blanched
1 bn Spring onions; cut or sliced up
1 bn Rocket herbs
Olive oil
4 Gem lettuces
4 Beef tomatoes; skinned and
chopped
Flaked Parmesan cheese
Seasoning
Poach the gnocchi in simmering water until they float to the surface.
Drain.
In the wok heat the olive oil and stirfry the beans and spring onions.
Then add the drained gnocchi and rocket leaves. Cook for another 2 minutes
and season.
To serve, arrange half the gem lettuce and tomatoes on a plate and top with
half the stirfry mixture. Sprinkle with half the Parmesan. Add the rest of
the gem lettuce then the stirfry again and finally more tomatoes and
Parmesan.
