Recipe - Stir-Fried Pork And Cucumbers

One half pound Lean pork
1 tablespoon Soy sauce
2 Cucumbers
2 tablespoon Oil
One fourth teaspoon Salt
3 dr Sesame oil; more or less
1. Slice pork thin against the grain. Add soy sauce to pork and toss.
Slice cucumbers thin, but do not peel.
2. Heat oil. Add pork and stirfry until it begins to brown (about 3
minutes).
3. Add cucumbers and salt; stirfry 1 to 2 minutes. Then cook, covered,
over medium heat until done (about 1 to 2 minutes more). Sprinkle with
sesame oil and serve at once.
VARIATION: Use 1 cucumber and One half cup bamboo shoots, cut or sliced up thin. Add as
in step 3.
