Recipe - Stir-Fried Cooked Duck With Bean Sprouts

2 cup Cooked duck meat
One half pound Bean sprouts
1 tablespoon Oyster sauce
1 tablespoon Sherry
2 tablespoon Water
One half teaspoon Salt
2 tablespoon Oil
1. Bone and shred cooked duck. Blanch bean sprouts.
2. Combine oyster sauce, sherry, water and salt.
3. Heat oil. Add bean sprouts and stirfry to heat (about One half minute). Add
duck and stirfry to heat through.
4. Add oyster sauce mixture, stirring briefly to blend (about 1 minute).
Serve at once.
NOTE: Any leftover duck, whether it's whitesimmered or redcooked or
roasted, can be used in this recipe.
