Recipe - Steamed Egg

8 lg Eggs; beaten lightly
2 tablespoon Chopped spring onions
1 lg Red chilli; deseeced and
; chopped finely, or
; a large pinch of
; chilli powder
2 Garlic cloves chopped finely
1 tablespoon Fish sauce or light soy
sauce
125 g Shelled roughly chopped
prawns; or chopped cooked
; chicken (4oz)
A few leaves of fresh basil
or mint
2 tablespoon Coconut cream or single
cream
Oil or butter for greasing
Salt and pepper to taste
Put all the ingredients in a glass bowl and mix them thoroughly by stirring
quickly with a large spoon for several seconds.
Divide among four welloiled or buttered ramekins or other suitable
heatproof bowls.
Steam in a steamer for 8 minutes. Alternatively, you can cook them in a
bainmarie in the oven at Gas Mark 4/180ø/350øF for 2530 minutes. Serve
warm or cold.
