Recipe - Steamed Berry Sponge

175 g Self raising flour
150 g Butter; softened
150 g Caster sugar
One fourth teaspoon Baking powder
1 Lemon; zest of
60 g Blueberries
60 g Strawberries; minced
60 g Blackberries
1 Apple; minced
2 Eggs; beaten
2 tablespoon Honey
60 g Raspberries
Butter for greasing
Grease the pudding moulds with a little butter and dust with a little
flour.
Skin, core and dice the apple fine. Mix with the berries and the honey, put
into bottom of basin bowl (1One half inches deep).
Cream together the butter and the sugar and gradually add the eggs a little
at a time, beating well. Fold in the flour with the lemon zest.
Place the mix into the bag and pipe out the mix on to the prepared moulds
until Three fourths full.
Flat out with a wet hand and cover with foil. Steam for approximately 45
minutes.
