Recipe - Steak With Madeira Basil And Olives

Ingredients:

1 tablespoon Olive oil
4 Sirloin or fillet steaks;
125g (4oz) 175g
; (6oz), seasoned
; with salt and
; freshly ground
; black pepper
3 tablespoon Madeira or brandy
1 200 millilit half fat creme
fraiche
1 tablespoon Black olives; pitted and
finely
; chopped
1 15 grams pac basil; roughly
chopped

Heat the oil in a large frying pan over a moderate heat.

Place the seasoned steaks into the hot pan, cook the steaks for 2 1/2
minutes on each side rare; 4 minutes each side medium; 6 minutes each
side well done.

Remove the steaks from the pan, cover with foil and keep warm.

Add the Madeira to the pan and cook for 1 minute. Stir in the creme
fraiche, olives and basil.

Pour the sauce over the steaks.

Notes:

Serve the steaks with lyonnaise potatoes and crisp green vegetables.
