Substitute mushrooms for the
kidneys

This one is for the less adventuresome, but it is delicious even without
the kidney.

Substitute saut‚ed mushrooms for the kidneys in the recipe for Steak and
Kidney Pie. Use about 1 pound of fresh mushrooms

and saut‚ them in a hot pan with a little butter. Omit the kidneys from the
recipe and proceed as above. Add the mushrooms just after you thicken the
sauce with the roux.
